Andouille Sausages cut into small pieces is an excellent addition into a white bean, kale, potato, carrot and celery soup.A whole meal and the flavor of the sausage gives the soup a special taste.
I started purchasing the Andouille way back when the company was still Continental Sausage I loved the sausage so much I made special trips to the store in Cherry Creek, which was not even remotely close to where I live; even after the change over to charcutnuvo the quality, taste and flavor of the sausage remained high. Now for some strange reason I'm assuming it's a cost cutting deal the sausage size has shrunk down to the size of a small hot dog and the texture has change as well, the flavor is still good. The smaller size does not work well with recipes like gumbo and many others that I used the sausage for.
I really wish you would make them bigger like they used to be more like the Smoked Pork and Bison Jalapeño Cheddar Bratwurst. By the way I love the Smoked Pork and Bison Jalapeño Cheddar Bratwurst also.
