Sweet Potato, Kale, and Sausage Protein Bowl



—Ingredients

1 package Charcutnuvo Smoked Pork and Elk Jalapeno Cheddar Sausage | sliced into medallions

3 medium sweet potatoes | peeled and chopped

3 cups kale | chopped

1 red bell pepper | diced

½ yellow onion | diced

3 cloves garlic | minced

1 ½  tbsp Old Bay Seasoning

4 tbsp olive oil | divided

Salt and pepper to taste

 

–INSTRUCTIONS

 

Heat a large skillet over medium-high heat and add 1 tbsp of olive oil. Add chopped sweet potatoes, onions, and bell pepper to the skillet. Mix well and saute for 1 minute.

Next, coat the veggies again with 2 tbsp olive oil. Add Old Bay Seasoning and minced garlic. Mix well and saute until vegetables are tender, about 5-7 minutes.

Meanwhile, heat a medium skillet over medium heat and add 1 tbsp of olive oil. Add sliced Charcutnuvo Smoked Pork and Elk Jalapeno Cheddar Sausage to the skillet and saute for about 5 minutes.

Once sausage is cooked and veggies are tender, add the sausage to the skillet with the veggies. Turn the heat down to low and mix in the shopped kale. Add salt and pepper to taste and serve immediately. Enjoy!
